Grain Free Traditional Chocolate Chip Cookies

I love cookies and refrain from eating them often because of the grains and sugars. Of course grain-free alternatives are a dime a dozen, BUT actually good tasting ones are very hard to come by. Until now... I stumbled across a recipe from a member of Elana's Pantry forum. Not all recipes on that site are good as many call for using agave syrup and other not so healthy ingredients, but this one is pretty good. I did make some minor tweaks to it so it will be healthier. In the end the final result is amazing. You will love it!

 

Grain Free Traditional Chocolate Chip Cookies 1/2 cup + 1 tablespoon coconut flour 1/2 teaspoon baking soda 8 tablespoons unrefined coconut oil (make sure it is "unrefined") 1/3 cup blonde palm sugar (you can cut this down as much as you want if you'd like) 2 large pasture eggs (these are the real cage free eggs) 1 1/2 teaspoons vanilla or vanilla bean extract 1 cup baby chocolate chips (Get the kind that is soy and dairy free. If you have trouble then buy the brand that is made for people with allergies.)

Directions: Using a medium bowl, whisk the coconut flour and the baking soda together. Then in a large bowl mix together the coconut oil, palm sugar, eggs, salt, and vanilla. Next mix the dry ingredients into the wet. Lastly add the chocolate chips. Bake at 350 for exactly 13 minutes. Then enjoy your super yummy chocolate chip cookies that are 100% grain free!!

They will turn out semi-soft. They will have a soft crispiness on the outside, but the inside will be nice and soft. Now that's just perfect! Mmmmmmmmmmmm
