Below is a Superfood Salad with caramelized onions, avocado, seeds, tomatoes, and quinoa. It is delicious and easy to prepare ahead of time, feel free to add in and take out ingredients that suit you're own taste buds, but don't be afraid to try NEW Superfoods!
Superfood Salad With Caramelized Onions
2 cups of spinach 2 cups of leafy lettuce 1 small avocado ½ a red onion caramelized 3 TBS of hemp seeds 3 TBS pumpkin seeds 4 dried tomatoes chopped 1 cup of cooked quinoa 2 ½ TBS. of olive oil 2 TBS. balsamic vinegar
Directions: 1. Chop the red onion and sauté it in a sauce pan over medium heat with ½ TBS of olive oil. Cook until the onions have a caramel color to them. 2. In a large salad bowl mix together the two different types of lettuce and on top of them sprinkle on the seeds, tomatoes, cooked quinoa, and diced avocado. 3. Once the onions are cooled, place them on top of the salad and toss the salad with the remaining olive oil and balsamic vinegar. 4. Eat and enjoy, try to share the salad with another person ☺
